Lemon Crinkle Cookies
Ingredients:
- 1 box lemon cake mix (with pudding in it)
- 8-oz. container Cool Whip
- 1 egg
- 1 c. powdered sugar
Directions:
Feel free to double this recipe. One recipe only makes about 2 dozen cookies. Also make sure to get cake mix that has pudding in it. Regular cake mix will not work for this recipe.
Blend cake mix, 2 1/4 cups Cool Whip, and egg together in a mixing bowl. Mixture will be very sticky.
Scoop cookie mixture out into small balls. A cookie scoop like this one will work very well for this.
Place the powdered sugar into a shallow dish and then roll each ball into the powdered sugar.
Place the cookies onto a cookie sheet lined with parchment paper or silicone baking mats. Arrange cookies about 2 inches apart.
Bake cookies at 350 degrees for 10-12 minutes, or until cookies are lightly browned on the bottom. Transfer cookies to wire cooling racks to cool.
