This rocky road candy (also called rocky road peanut clusters) is an easy treat to make for Christmas. It only takes a few steps to make, and you can literally have them made in 15 minutes.

This is a fun recipe for kids and grandkids to help make. Make a double batch, and they will still disappear quickly!  Add these candies to a plate of treats to give away to family and friends during the holidays. Don’t forget to add some homemade peanut brittle, old fashioned divinity, and homemade toffee to your gift trays!

Rocky Road Peanut Clusters

 
 
Ingredients:
 
1 (11-oz) pkg chocolate chips
1 (11-oz) pkg butterscotch chips
2 tbsp vegetable oil
3 c peanuts
3 c mini marshmallows
 
 
Place the chocolate chips, butterscotch chips, and vegetable oil in a microwave safe bowl and microwave for 1 minute. Stir. Repeat at 30 second intervals until chips have melted. I run my microwave on 70% power to do this. You will find that the normal 100% power is a little too much and may scorch the chocolate. 
 
 
In a large mixing bowl stir together melted chocolate, peanuts, and marshmallows.
 
 
Spoon mixture onto waxed paper and let set until chocolate hardens. Store candies in an airtight container.
 
 
Makes about 3 dozen candies.
