Of course my family loves some kinds of cookies more than others, but it seems as if there are certain cookie recipes I come back to time and time again.
Chocolate peanut butter no bake cookies are definitely one of the time-tested family approved recipes. If you want to quickly make a batch of cookies to take to a potluck or family get together, then these are the cookies to make.
They can even be make dairy and gluten free for those who have food allergies.
If you have young children who want to learn how to cook, this recipe is also great for beginning cooks. Just a few simple ingredients and no baking. Great for kids to practice measuring. My 6-year-old son loves to help me make these.
- 2 c. sugar
- 3 tbsp. baking cocoa
- 1 c. butter
- 1/2 c. milk
- 4 c. oatmeal*
- 1/2 c. peanut butter
- 1 tsp. vanilla extract
- Pinch of salt
*You can use either quick cooking or old fashioned oats for this recipe. I usually use old fashioned oats because I prefer the texture that old fashioned oats gives to these cookies.
In a large sauce pan, combine sugar, baking cocoa, butter, and milk. Stir until all is dissolved and simmer for 2 minutes.
Remove the pan from the heat and stir in oats, peanut butter, vanilla extract, and salt.
Use a tablespoon or other small spoon to drop spoonfuls of the oatmeal mixture onto waxed paper. Let cookies set until hardened.
If you have any trouble with these cookies not setting well or being too crumbly, you either didn’t cook it for the correct amount of time, put in too much peanut butter, or put in too much oatmeal.
Sometimes if I am in a hurry and not measuring exactly they don’t turn out quite right. If you follow the directions exactly, they will turn out perfect every time.
If you need to make these cookies gluten or dairy free, just make sure that your oats are gluten free and you can substitute dairy free spread for the butter and lactose free milk for the regular milk.
