How to Freeze Breakfast Sandwiches

I pinned this recipe for how to make and freeze breakfast sandwiches on Pinterest a couple of months ago, and the pin was so popular that I figured I better try it out for myself to see if my boys would eat them.

It turns out that this recipe is great, and I will definitely be making it again. It is a quick breakfast for people who need to get off to school or work in the morning, and you can make up a bunch ahead of time and put them in the freezer so that they are ready and waiting when you need them.

 

You can make these with sausage patties or sliced ham. I made mine with Jimmy Dean sausage patties that I found at Costco, and they worked great. You will also need eggs, sliced cheese, and English muffins.

The only real preparation you need to do ahead of time is to cook the eggs. The recipe I looked at said to cook the eggs in the oven. Now that’s an interesting thought!

 

All you have to do is grease a muffin tin. Crack an egg and gently pour it into each greased hole of the muffin tin, for as many sandwiches as you want to make.

 

Use a fork to gently break the egg yolk, but do not stir. Place the pan in a 350 degree oven for 10-15 minutes. You want the egg to be cooked through, but not hard and rubbery. It should not be runny either. Watch them closely the last couple of minutes.

 

Remove the eggs from the oven and gently pry them from the pan with a fork. Don’t worry, they don’t have to look perfect.

 

Next assemble the sandwiches. For each sandwich you need one English muffin, one piece of sausage or a couple of slices of ham, once slice of cheese, and one cooked egg.

 

After you have assembled the sandwich you are ready to prepare them for the freezer. Place them in freezer ziploc bags, or better yet, seal them with your Food Saver vacuum food sealer.

 

To reheat a sandwich, wrap the sandwich in a paper towel and cook it in the microwave at 50% power for 1 minute. Turn the sandwich over and heat on 100% power for 1 minute. Enjoy!
