Coca Cola Cake

The recipe for Coca Cola cake has been around for a long time. I remember it from when I was a kid, way back in the ’70s. 1 c. Coca Cola
1/2 c. vegetable oil
1/2 c. butter or margarine
3 tbsp. baking cocoa
2 c. sugar
2 c. flour
1/2 tsp. salt
2 eggs
1/2 c. buttermilk*
1 tsp. baking soda
1 tsp. vanilla

*Note: If you don’t have buttermilk on hand, it is easy to make your own! Just add 1 tbsp. of lemon juice or white vinegar per 1 c. of milk, or in this case 1/2 tbsp. of lemon juice.


1/2 c. butter or margarine
3 tbsp. baking cocoa
6 tbsp. milk
1 tsp. vanilla
3 3/4 c. powdered sugar

Preheat oven to 350 degrees.

In a small sauce pan, mix together Coca Cola, vegetable oil, margarine, and baking cocoa. Bring to a boil. In another bowl, combine sugar, flour, and salt. Pour the hot Coca Cola mixture into the flour mixture and beat well.

Add eggs, buttermilk, baking soda, and vanilla and beat well. Pour mixture into a greased and floured 13x9x2-inch baking dish. Bake for 20 to 25 minutes. Remove pan from oven and let cool for about 10 minutes before frosting.

To prepare the frosting, combine butter or margarine, baking soda, and milk in a small sauce pan. Heat until the margarine melts, and then pour into a big mixing bowl. Beat in the vanilla and powdered sugar. Spread (or pour) the frosting on the cake while it’s still warm. The frosting will harden as it cools.
