  • 4 thick slices of bread
  • 2 large eggs
  • 1/2 cup milk
  • 1 scoop vanilla protein powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • Butter or cooking spray for the skillet

I like using sourdough bread because the sturdy slices hold up well when dipped in the custard mixture. Brioche, challah, or thick-cut sandwich bread will also work.

Choosing Your Protein Powder

Vanilla protein powder works particularly well in this recipe because it adds both protein and a little sweetness. This is the vanilla protein powder I use and love.

Whey, whey/casein blends, and many plant-based protein powders can work. If your protein powder is already quite sweet, you may not need any additional sweetener in the batter.

How to Make High Protein French Toast

1. Make the Protein Custard

In a shallow bowl, whisk together the eggs, milk, vanilla protein powder, vanilla extract, cinnamon, and salt.

Whisk until the protein powder is well incorporated and there are no large lumps.

If your protein powder tends to clump, whisk the milk and protein powder together first before adding the eggs and remaining ingredients.

2. Heat the Skillet

Heat a large skillet or griddle over medium heat.

Add a little butter or cooking spray.

You want the pan hot enough to brown the bread but not so hot that the outside burns before the center is warmed through.

3. Dip the Bread

Dip each slice of bread into the protein custard mixture.

Turn it over so both sides are coated, but don’t leave the bread soaking for too long. Very soft bread can become difficult to handle if it absorbs too much of the mixture.

4. Cook the French Toast

Place the coated bread slices in the hot skillet.

Cook for about 2–3 minutes per side, or until golden brown and cooked through.

Add a little more butter to the pan between batches if needed.

When you’re ready to eat, warm the slices in a toaster, toaster oven, skillet, or microwave.
