2 1/4 c. flour
3/4 tsp. salt
1 tsp. sugar
4 tsp. baking powder
1/3 c. butter, very cold
1 c. cold milk
Preheat oven to 450 degrees. Place flour, salt, sugar, and baking powder in a large bowl. Chop the butter into small pieces and cut into the flour mixture with a pastry blender. Stir in the milk until just combined.
Gently knead the dough on a floured surface until the dough maintains the shape of a ball. Roll the dough approximately 3/4 inch thick. You can make it thicker if you like taller biscuits. Use a biscuit cutter
to cut the dough into 2 inch circles.
Place the biscuits on a cookie sheet and bake for about 8 minutes, or until golden brown.
Note: They key to perfect biscuits is to have the butter and milk be really cold. This will determine how flaky and light your biscuits will be.
