- 4 thick slices of bread
- 2 large eggs
- 1/2 cup milk
- 1 scoop vanilla protein powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- Butter or cooking spray for the skillet
I like using sourdough bread because the sturdy slices hold up well when dipped in the custard mixture. Brioche, challah, or thick-cut sandwich bread will also work.
Choosing Your Protein Powder
Vanilla protein powder works particularly well in this recipe because it adds both protein and a little sweetness. This is the vanilla protein powder I use and love.
Whey, whey/casein blends, and many plant-based protein powders can work. If your protein powder is already quite sweet, you may not need any additional sweetener in the batter.
How to Make High Protein French Toast
1. Make the Protein Custard
In a shallow bowl, whisk together the eggs, milk, vanilla protein powder, vanilla extract, cinnamon, and salt.
Whisk until the protein powder is well incorporated and there are no large lumps.
If your protein powder tends to clump, whisk the milk and protein powder together first before adding the eggs and remaining ingredients.
2. Heat the Skillet
Heat a large skillet or griddle over medium heat.
Add a little butter or cooking spray.
You want the pan hot enough to brown the bread but not so hot that the outside burns before the center is warmed through.
3. Dip the Bread
Dip each slice of bread into the protein custard mixture.
Turn it over so both sides are coated, but don’t leave the bread soaking for too long. Very soft bread can become difficult to handle if it absorbs too much of the mixture.
4. Cook the French Toast
Place the coated bread slices in the hot skillet.
Cook for about 2–3 minutes per side, or until golden brown and cooked through.
Add a little more butter to the pan between batches if needed.
5. Add Your Favorite Toppings
Transfer the French toast to a plate and add your favorite toppings.
Fresh berries and a drizzle of maple syrup are always a good combination, but there are plenty of other ways to serve it.
High Protein French Toast Toppings
Try topping your French toast with:
- Fresh strawberries
- Blueberries
- Raspberries
- Sliced bananas
- Greek yogurt
- Peanut butter
- Almond butter
- Chopped pecans or walnuts
- Chia seeds
- Cinnamon
- Maple syrup
- Honey
- Powdered sugar
For even more protein, add a spoonful of Greek yogurt or nut butter on top.
Can I Make French Toast Ahead of Time?
Yes! High protein French toast is a good candidate for breakfast meal prep.
Cook the French toast according to the recipe and allow it to cool completely. Place the slices in an airtight container and refrigerate for several days.
When you’re ready to eat, warm the slices in a toaster, toaster oven, skillet, or microwave.
You can also freeze the cooked French toast. Place pieces between sheets of parchment paper so they don’t stick together, then store them in a freezer-safe container or bag.
Reheat directly from frozen in a toaster or toaster oven.
What Kind of Bread Is Best?
Almost any bread will work, but thicker slices tend to produce the best French toast.
Some good options include:
Sourdough: Sturdy and slightly tangy, making it especially good with sweet toppings.
Brioche: Rich and buttery with a soft interior.
Challah: Light and slightly sweet.
Whole wheat bread: A good everyday option with a little more texture.
You can also use bread that’s a day or two old. Slightly stale bread actually absorbs the custard beautifully without becoming quite as soggy as very fresh bread.
How to Make This Recipe Even Higher in Protein
The easiest way to increase the protein is to pay attention to the protein powder you use and add a high-protein topping.
Try serving your French toast with:
- Greek yogurt
- Cottage cheese
- Peanut butter
- Almond butter
- A side of scrambled eggs
- Fresh berries and Greek yogurt
You can also experiment with adding an extra egg white to the custard mixture.
High Protein French Toast for Breakfast
I love recipes like this because they don’t feel like “health food.”
It’s still French toast—golden brown bread with warm cinnamon and vanilla—but the protein powder gives it a little more staying power.
And there are so many ways to change it up. Add berries in the summer, apples and cinnamon in the fall, or peanut butter and banana when you’re craving something a little more indulgent.
If you’re building a collection of easy protein breakfast recipes, this is a great one to add to the rotation.
