These pumpkin cookies are soft, chewy, and full of warm fall spices.
They’re the kind of cookie that makes the kitchen smell amazing while they’re baking, and they’re especially good with a cup of coffee on a cool fall afternoon.
I like recipes like this because they’re simple enough for an ordinary baking day but still feel special. If you’re doing a little fall baking, these definitely belong on the list.

Ingredients
- 1 cup pumpkin puree
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 1/2 cup butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/2 teaspoon salt
Instructions
Preheat the oven to 350°F. Line two baking sheets with parchment paper.
In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.

Beat in the pumpkin puree, egg, and vanilla until well combined.
In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, ginger, nutmeg, cloves, and salt.
Gradually add the dry ingredients to the pumpkin mixture, stirring just until everything is combined. Don’t overmix.
Drop rounded tablespoons of dough onto the prepared baking sheets, leaving a little space between each cookie.
Bake for 10–12 minutes, or until the cookies are set around the edges and the centers still look slightly soft.
Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
A Few Tips
Use pumpkin puree, not pumpkin pie filling. Pie filling already contains sugar and spices and will change the recipe.
For an extra cozy flavor, you can sprinkle the tops with a little cinnamon sugar before baking.
These cookies are especially good slightly warm, but they also keep well in an airtight container for several days.
Makes about 24 cookies.
