Looking for a quick lunch to make ahead of time and have ready to go for the week? A couple of years ago I made chicken caesar salad in a jar, and it is now one of the most popular recipes on this web site. When I saw this chicken taco salad version, I just had to give it a try.

This chicken taco salad is really easy to make. All you need to cook ahead of time is the chicken. If you have some leftover rotisserie chicken or other chicken leftovers, that will work perfectly for this recipe. If not, just fry up a chicken breast or two.
This recipe makes 2 quart sized or 4 pint sized jars of salad.
Chicken Taco Salad in a Jar Recipe
Ingredients:
- Romaine lettuce
- 2 c. chopped chicken
- 1 tbsp. taco seasoning mix*
- Black olives
- Chopped tomatoes
- Black beans
- Canned corn
- Grated cheese
- Chopped onions
- Salsa or ranch salad dressing
*You can use store-bought taco seasoning mix or try my easy homemade taco seasoning mix.
To prepare the chicken, just stir 1 tablespoon taco seasoning into the chopped chicken. (You can also substitute ground hamburger for the chicken if you like).
This recipe is very versatile. You can add or take away any ingredients you like. I started out with black beans: I drained them and divided the can between two quart sized canning jars.
I then added a layer of corn, tomatoes, then grated cheese, chicken, chopped onions, then the chopped romaine lettuce. You want the jar to be about half full with lettuce, and half full with the other ingredients.
Ready for the fun part? If you put your salad dressing or salsa in with the salad it will get soggy if you leave it in the refrigerator more than a day or so. This salad will actually last up to a week in the refrigerator if you keep the salad dressing or salsa separate.
The secret? Plastic applesauce or fruit snack cups perfectly fit into the top of a wide mouth canning jar. Just wash out the container and place your salsa or salad dressing in it. Place the cup on top of the lettuce, and place the canning jar lid and ring on top.
That’s it! Your chicken taco salad in a jar will last for up to one week!
