Crisp Topping
- 1 cup old-fashioned rolled oats
- 3/4 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup chopped pecans
- 1 teaspoon cinnamon

How to Make Pumpkin Pie Crisp
1. Prepare the Pumpkin Filling

In a large bowl, whisk together the pumpkin puree, evaporated milk, eggs, brown sugar, granulated sugar, vanilla, pumpkin pie spice, cinnamon, and salt until smooth.

Pour the pumpkin mixture into the prepared baking dish.
2. Make the Crisp Topping
In another bowl, combine the oats, flour, brown sugar, pecans, cinnamon, and salt.
Pour in the melted butter and stir until everything is evenly combined and crumbly.
3. Add the Topping
Sprinkle the oat mixture evenly over the pumpkin filling.
4. Bake
Bake for 45–50 minutes, or until the topping is golden brown and the pumpkin filling is set around the edges with just a slight jiggle in the center.
Let the crisp cool for about 15–20 minutes before serving.
How to Serve Pumpkin Pie Crisp
I love serving this warm with a scoop of vanilla ice cream. You can also add:
- Whipped cream
- A drizzle of caramel sauce
- Chopped toasted pecans
- A sprinkle of cinnamon
- A little maple syrup
The combination of the creamy pumpkin filling and crunchy topping is what makes this dessert so good.
Tips for the Best Pumpkin Pie Crisp
Use pure pumpkin puree. Make sure you’re using pumpkin puree rather than pumpkin pie filling since the filling already contains sugar and spices.
Use old-fashioned oats. They give the topping a much better texture than quick oats.
Don’t overbake it. The pumpkin layer should still have a slight jiggle when you take it out of the oven. It will continue to set as it cools.
Let it rest before serving. Giving it 15–20 minutes to cool makes it easier to scoop and allows the pumpkin filling to finish setting.
Make-Ahead Pumpkin Pie Crisp
You can make this dessert a day ahead and keep it covered in the refrigerator.
When you’re ready to serve it, warm individual portions in the microwave or place the whole dish in a 300°F oven until heated through.
