I love making homemade mixes. I have a whole shelf full of them now, and I use them all the time. My brownie mix is one of our favorites. One mix I had never gotten around to making is muffin mix.

 

I thought it would be great to have an easy muffin mix for when I want to make muffins in a hurry.

 

Muffin Mix Recipe

Ingredients:

  • 8 c. flour*
  • 3 c. sugar
  • 3 tbsp. baking powder
  • 2 tsp. salt
  • 1 tbsp. cinnamon

 

*You can substitute wheat flour for the white flour if you like, or substitute part of the white flour with another kind of flour. In my mix I used 6 c. white flour and 2 c. oat flour.

 

If you are wanting to make a gluten free muffin mix, then substitute your favorite gluten free flour blend instead. Just make sure it doesn’t already have baking powder added to it.

 

Mix all the ingredients together and store in an airtight container like this one. Make sure to mix it really well so that the ingredients are evenly distributed in the container.

Muffin Recipe

  • 2 3/4 c. muffin mix
  • 1 egg, lightly beaten
  • 1 c. milk
  • 1/2 c. butter or margarine, melted

 

This recipe makes a basic muffin. You can customize this recipe by adding 1 cup of blueberries, chopped apples, cranberries, raisins, chocolate chips, etc.

 

Preheat your oven to 400 degrees. Stir all ingredients together in a bowl until blended. Fill muffin tins 2/3 full and bake for about 20 minutes, or until a toothpick comes out clean.

  1. Thank you for this recipe. I live alone and love to bake. I’m going to try this recipe with freeze dried eggs. It’s hard to divide an egg. Always looking for small batch things to bake. Again, thank you for the inspiration.

  2. We love this recipe in my house! My husband love cinnamon muffins so we increase the amount of cinnamon to 3-4 Tablespoons. I’ve also used this as a starting point to make baby friendly applesauce muffins. Great easy recipe!
