Why You’ll Love These Deviled Egg Eyeballs

These are one of those Halloween recipes that look much more complicated than they actually are.

You can make the deviled eggs ahead of time and decorate them shortly before serving. They’re also easy to double if you’re feeding a crowd.

They’re perfect for:

  • Halloween parties
  • Halloween potlucks
  • Classroom parties
  • Family Halloween gatherings
  • Halloween movie nights
  • Spooky appetizer trays

Ingredients

You will need:

  • Hard-boiled eggs
  • Mayonnaise
  • Yellow mustard
  • Relish or finely chopped pickles
  • Salt and pepper
  • Green food coloring
  • Black olives
  • Chives or green onions
  • Red food coloring or red decorating gel

The green food coloring gives the deviled egg filling that fun eyeball color. You can make the filling as bright or subtle as you like.

How to Make Deviled Egg Eyeballs

Prepare the eggs

Start by hard-boiling your eggs. Once they’re cooked, cool them completely and peel them.

Slice each egg in half lengthwise and carefully remove the yolks.

Place the yolks in a bowl and mash them with a fork.

Make the deviled egg filling

Add mayonnaise, mustard, relish, salt, and pepper to the mashed egg yolks.

Mix until smooth and creamy.

Add a few drops of green food coloring and stir until the filling reaches the color you want.

Fill the eggs

Spoon or pipe the green filling back into the egg white halves.

Don’t worry about making them perfectly smooth. A little texture actually makes the eyeballs look more interesting.

Add the eyeballs

Cut black olives into rings and place one on top of each mound of green filling.

The olive ring makes the perfect creepy pupil.

You can add a little chopped chive or green onion around the olive to give the eyeball more detail.

Add the bloodshot veins

For the finishing touch, use a tiny amount of red decorating gel or red food coloring to draw thin, irregular lines across the egg whites.

Don’t make the lines too perfect. Random little squiggly lines look much more like bloodshot eyes.

Make Them Ahead of Time

You can prepare the hard-boiled eggs and deviled egg filling ahead of time and keep them refrigerated.

For the best appearance, I recommend adding the olive pupils and bloodshot details closer to serving time.

Keep the finished deviled eggs refrigerated until you’re ready to put them on the table.
