This easy Spanish rice recipe starts with a simple homemade mix. A budget-friendly side dish for weeknight meals and family dinners.

Spanish Rice Mix

Ingredients

  • 1/2 cup uncooked spaghetti noodles broken into small pieces
  • 3/4 cup uncooked white rice
  • 1 tsp salt
  • 1 tsp minced onion
  • 1/2 tsp chili powder

Instructions

  1. Break spaghetti into small pieces (about 1/2 inch)
  2. Add all ingredients to a bowl
  3. Mix well and store in a jar or airtight container

How to Make Spanish Rice

  1. Melt 2 tbsp butter in a saucepan
  2. Add the rice mix
  3. Add 2 cups water or chicken broth
  4. Cover and simmer for about 20 minutes, until rice is tender
