Slow Cooker Teriyaki Chicken

Ingredients

  • 2 pounds boneless skinless chicken thighs or breasts
  • 1 cup teriyaki sauce store-bought or homemade
  • 1/4 cup soy sauce
  • 2 tablespoons honey or brown sugar
  • 1 tablespoon fresh ginger minced (or 1 teaspoon ground ginger)
  • 1 tablespoon sesame oil optional
  • 2 cloves garlic minced
  • 1 cup chopped bell peppers optional
  • 1 cup chopped onions optional
  • Cooked rice or quinoa for serving
  • Sliced green onions and sesame seeds for garnish

Instructions

  1. To begin, place the chicken thighs or breasts in the bottom of the crock pot. In a separate bowl, mix together the teriyaki sauce, soy sauce, honey (or brown sugar), minced garlic, minced ginger, and sesame oil until well combined.
  2. Pour this sauce mixture over the chicken in the crock pot. If desired, add the chopped bell peppers and onions on top.
  3. Cover the crock pot and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and tender.

Recipe Notes

Once cooked, remove the chicken from the crock pot and shred it with two forks. Return the shredded chicken to the pot and stir to combine with the sauce. Serve the teriyaki chicken over cooked rice or quinoa. Garnish with sliced green onions and sesame seeds if you like. Enjoy your meal!
