Lemon Blueberry Bread

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup sugar
  • ½ teaspoon salt
  • 2 teaspoons baking powder
  • ½ cup melted butter
  • 2 eggs
  • 1 tablespoon lemon juice
  • Zest of one lemon
  • 1 cup fresh blueberries

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, mix the flour, sugar, salt, and baking powder. In another bowl, combine the melted butter, eggs, lemon juice, and lemon zest.
  2. Pour the wet mixture into the dry ingredients and stir gently. Be careful not to overmix. Finally, fold in the blueberries.
  3. Pour the batter into a greased bread pan. Bake it in the preheated oven for 50 to 60 minutes. Check for doneness by inserting a toothpick into the center.
  4. If it comes out clean, the bread is ready. If not, bake for an additional 5-10 minutes. Make sure to keep an eye on it toward the end of the baking time to avoid overcooking.
