Strawberry Lemonade Jam (for Canning)

Ingredients

  • 4 cups crushed strawberries
  • 1 cup lemon juice
  • 2 tablespoons lemon zest optional
  • 7 cups sugar
  • 1 box powdered pectin

Instructions

  1. Crush strawberries to measure 4 cups.
  2. Combine strawberries, lemon juice, and zest in a saucepan.
  3. Stir in pectin and bring to a rolling boil.
  4. Add sugar and return to a full rolling boil.
  5. Boil for 1 minute, stirring constantly.
  6. Remove from heat and skim foam.
  7. Ladle into sterilized jars, leaving 1/4 inch headspace.
  8. Wipe rims, apply lids, and process in water bath for 10 minutes.
  9. Cool completely and check seals.
