Strawberry Lemonade Concentrate (for Canning)

Ingredients

  • 7 cups sliced strawberries
  • 5 cups lemon juice
  • 7 cups sugar

Instructions

  1. Puree strawberries in a blender.
  2. Pour puree into a large saucepan.
  3. Add lemon juice and sugar; stir well.
  4. Heat to 190°F, stirring occasionally.
  5. Remove from heat.
  6. Ladle into sterilized jars, leaving 1/4 inch headspace.
  7. Wipe rims, apply lids, and process in water bath for 15 minutes.
  8. Cool completely and check seals.

Recipe Notes

Do not boil—heat only to 190°F
Use bottled lemon juice for safe acidity
