Strawberry Jam Recipe (for Canning)

Ingredients

  • 2 pounds strawberries hulled and sliced
  • 4 cups sugar
  • 1/4 cup lemon juice
  • 1 package powdered pectin

Instructions

  1. Crush strawberries in a large bowl.
  2. Stir in sugar and let sit 10 minutes.
  3. Transfer to saucepan and add lemon juice and pectin.
  4. Bring to a full rolling boil, stirring constantly.
  5. Boil for 1 minute.
  6. Remove from heat and skim foam.
  7. Ladle into sterilized jars, leaving 1/4 inch headspace.
  8. Wipe rims, apply lids, and process in water bath for 10 minutes.
  9. Cool completely and check seals.
