Rhubarb Butter (Easy Homemade Recipe)

Ingredients

  • 8 cups fresh rhubarb chopped
  • 3 cups brown sugar
  • 2 cups water
  • 2 teaspoons cinnamon
  • 1/4 teaspoon ground ginger
  • 1 tablespoon vanilla extract

Instructions

  1. Wash and chop rhubarb into small pieces.
  2. Add rhubarb, sugar, water, cinnamon, ginger, and vanilla to a large pot.
  3. Cook over medium heat for 45–60 minutes, stirring occasionally, until rhubarb is soft.
  4. Continue cooking if needed until the mixture thickens.
  5. Use an immersion blender or food mill to puree until smooth.
  6. Let cool slightly—the mixture will thicken more as it cools.

Recipe Notes

Fill sterilized jars, leaving 1/4 inch headspace
Wipe rims and apply lids
Process in a boiling water bath for 10 minutes
