Preheat oven to 350°F. Grease and flour a 9×5-inch loaf pan or line it with parchment paper.

Grate the zucchini and place it in a clean kitchen towel or cheesecloth. Squeeze out excess moisture.

In a large bowl, combine the zucchini, pumpkin puree, oil, granulated sugar, brown sugar, eggs, and vanilla extract. Mix until well combined.

In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, salt, and ginger, if using.

Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Do not overmix.

Fold in the chopped nuts or chocolate chips, if using.

Pour the batter into the prepared loaf pan and spread evenly.

Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean. If the top begins browning too quickly, loosely cover with aluminum foil.

Let the bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
