Ingredients

Salad

  • 1 can mandarin orange segments drained
  • 4 cups mixed salad greens
  • 1/2 cup sliced almonds toasted
  • 1/4 cup red onion thinly sliced
  • 1/2 cup crumbled feta cheese or goat cheese
  • 1/2 cup sliced cucumber
  • 1/4 cup dried cranberries optional

Dressing

  • 3 tablespoons olive oil
  • 2 tablespoons white wine vinegar or apple cider vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. In a small bowl, whisk together the olive oil, vinegar, honey, Dijon mustard, salt, and pepper until smooth.
  2. In a large salad bowl, combine the mixed greens, mandarin oranges, almonds, red onion, cucumber, dried cranberries, and cheese.
