This Loaded Baked Potato Salad is packed with bacon, cheddar cheese, green onions, sour cream, and creamy potatoes. The perfect side dish for BBQs, cookouts, potlucks, and family dinners.

Loaded Baked Potato Salad

Ingredients

  • 10 medium red potatoes
  • 3/4 cup mayonnaise
  • 3/4 cup sour cream
  • 1 cup shredded cheddar cheese
  • 3 tablespoons chopped green onions
  • 6 slices bacon cooked and crumbled
  • Salt and pepper to taste

Instructions

  1. Wash potatoes and cut into 1-inch cubes. Leave skins on if desired.
  2. Place potatoes in a large pot of salted water and bring to a boil.
  3. Cook 15–20 minutes, or until fork tender.
  4. Drain potatoes well and let cool slightly.
  5. While potatoes cook, fry bacon until crisp. Drain on paper towels and crumble.
  6. In a large mixing bowl, combine mayonnaise, sour cream, salt, and pepper.
  7. Add cooked potatoes, bacon, cheddar cheese, and green onions.
  8. Gently stir until evenly coated.
  9. Serve warm or refrigerate until chilled before serving.

Recipe Notes

Red potatoes hold their shape best, but Yukon Gold or russet potatoes may also be used.
Reserve extra bacon, cheese, and green onions for topping before serving.
Add more mayonnaise or sour cream if you prefer a creamier salad.
