Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.

In a large bowl, whisk together flour, sugar, baking powder, salt, and lavender.

Cut in cold butter using a pastry cutter or fork until mixture resembles coarse crumbs with small pea-sized pieces.

In a separate bowl, whisk together heavy cream, egg, and vanilla extract.

Pour wet ingredients into dry ingredients and gently mix until a soft dough forms. Do not overmix.

Turn dough onto a lightly floured surface and gently bring it together.

Pat dough into a circle about 1 inch thick and cut into 8 wedges.

Place scones on prepared baking sheet. Brush tops with cream and sprinkle with sugar if desired.
