Ingredients

  • 2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon dried culinary lavender
  • 1/2 cup cold unsalted butter cubed
  • 1/2 cup heavy cream plus extra for brushing
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, salt, and lavender.
  3. Cut in cold butter using a pastry cutter or fork until mixture resembles coarse crumbs with small pea-sized pieces.
  4. In a separate bowl, whisk together heavy cream, egg, and vanilla extract.
  5. Pour wet ingredients into dry ingredients and gently mix until a soft dough forms. Do not overmix.
  6. Turn dough onto a lightly floured surface and gently bring it together.
  7. Pat dough into a circle about 1 inch thick and cut into 8 wedges.
  8. Place scones on prepared baking sheet. Brush tops with cream and sprinkle with sugar if desired.
  9. Bake for 15–18 minutes, or until lightly golden.
  10. Cool slightly and serve warm.

Recipe Notes

Use culinary lavender for the best flavor—too much can taste soapy.
Keep butter cold for flaky, tender scones.
For added flavor, mix in lemon zest or drizzle with a simple glaze.
Chill dough for 10–15 minutes if it becomes too soft before baking.
