Lavender Brownies

Ingredients

  • 1 teaspoon dried culinary lavender
  • 3 cups granulated sugar
  • 1 3/4 cups all-purpose flour
  • 3/4 cup baking cocoa
  • 1/2 teaspoon salt
  • 1 cup 2 sticks butter, melted
  • 4 large eggs
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat oven to 325°F and grease a 13×9-inch baking dish.
  2. In a mortar and pestle, grind the dried lavender with 1 tablespoon of the sugar until finely ground.
  3. In a large bowl, combine flour, cocoa, salt, remaining sugar, and the lavender mixture.
  4. In a separate bowl, whisk together eggs and vanilla extract. Slowly add melted butter and mix until smooth.
  5. Gradually stir the dry ingredients into the wet ingredients until just combined. Do not overmix.
  6. Pour batter into prepared baking dish and smooth the top.
  7. Bake for about 45 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let cool completely before cutting into squares.

Recipe Notes

Use culinary lavender for best flavor—too much can taste soapy.
Grind lavender well to evenly distribute flavor.
Brownies will be soft when warm but firm up as they cool.
For extra richness, add chocolate chips or a dusting of powdered sugar.
