Dandelion Jelly Recipe

Ingredients

  • 2 cups dandelion flowers
  • 4 cups sugar
  • 1 package powdered pectin
  • 2 tbsp lemon juice
  • 1/4 tsp butter optional

Instructions

  1. Pour boiling water over dandelions; steep overnight.
  2. Strain and measure 4 cups liquid.
  3. Add lemon juice and pectin; bring to boil.
  4. Boil 1 minute.
  5. Add sugar; boil 1 minute.
  6. Fill jars (1/4" headspace).
  7. Process 5 minutes in water bath.
  8. Yield: 3 pints or 6 half-pints
