Ingredients

  • 1 cup fresh blueberries
  • 1 tablespoon dried culinary lavender
  • 4 –5 lemons about 1 cup fresh lemon juice
  • 3/4 cup sugar or to taste
  • 5 cups water divided
  • Ice cubes

Instructions

  1. In a small saucepan, combine 1 cup water, sugar, and lavender. Bring to a boil and simmer for about 5 minutes.
  2. Remove from heat, let cool slightly, then strain out the lavender buds to make lavender syrup.
  3. Juice lemons to get about 1 cup fresh lemon juice.
  4. Blend blueberries until smooth.
  5. In a large pitcher, combine blueberry puree, lemon juice, lavender syrup, and remaining 3 cups cold water.
  6. Stir well and taste. Adjust sweetness or add more water if needed.
  7. Serve chilled over ice.

Recipe Notes

Use culinary lavender for the best flavor—too much can taste soapy.
Adjust sugar and water to taste depending on how sweet or tart you prefer.
For a shortcut, use pre-made lavender syrup.
Add sparkling water for a fizzy version.
