Dorito Casserole

This easy mexican-style casserole is a variation of a recipe I found in an old Pillsbury cookbook. I changed some of the ingredients to suit my family’s tastes, there are many variations you can try to find the recipe your family likes best.

Dorito Casserole Recipe

1 lb. ground beef or turkey
1 tbsp. taco seasoning mix
1/3 cup Ranch salad dressing
1 can condensed fiesta nacho cheese soup
1 can diced tomatoes, (optional)
1 can corn (optional)
1 can pinto or black beans
1 1/2 cups grated cheddar cheese
2 cups crushed Doritos
Shredded lettuce
1 can sliced olives (optional)

Heat oven to 375 degrees. Cook ground beef until cooked thoroughly; drain. Stir in taco seasoning, salad dressing, and cheese soup. Please note that you are only supposed to put in 2 tbsp. of the taco seasoning mix. I put in the whole package! It still tasted great though. Spoon hamburger mixture into an ungreased 8-inch square (2 quart) glass baking dish.

Spread tomatoes and corn (both optional) on top of beef mixture. Sprinkle cheese over top. Bake 25 minutes. Top with chips, lettuce, and olives.

Variations: This recipe would be great with other types of chips, such as Ranch Doritos, Fritos, or my personal favorite, Chili Cheese Fritos! Using ground turkey instead of hamburger will slightly lower the fat and calorie content, and I bet this recipe would also be great with chicken substituted for the ground beef.

This recipe is great if you need to make a quick dinner. You could keep the ingredients on hand in your pantry for nights you don’t feel like thinking of something for dinner. This dish was a hit with my whole family, even my 2 year old liked it!
