My family loves chicken fajitas. I’ve used several different recipes to make them, but this crock pot version looked really good. It was a success, we will definitely be making it again! The crock pot makes the chicken and vegetables so tender they just melt in your mouth.

To make these chicken fajitas you will need:
3 red or yellow bell pepper
1-1/2 pounds boneless chicken breast or thighs
1/4 to 1/2 cup chicken broth, depending on preference
1/2 teaspoon salt
2 tablespoons cumin
1-1/2 tablespoons chili powder
Squirt of lime juice
Slice the onions and bell peppers and place in the bottom of your greased crock pot. You can use green bell peppers too, but the colored ones really make this meal.
Lay the chicken on top of the vegetables. I used frozen chicken tenders, but you can use thawed out chicken too. Pour the chicken broth over all. If you are using frozen chicken then use the lesser amount of broth, when the chicken thaws it will add more moisture to the dish.
Sprinkle all of the spices on top of the chicken and squirt some lime juice over everything. Cook on low for 8 hours or on high for 4 to 6 hours. I cooked mine on high for about 5 hours and it turned out perfectly.
After the chicken and vegetables are done cooking, use two forks to shred the chicken, or you can leave it as is, depending on your preference. Serve with warm tortillas and your favorite fajita fixings such as grated cheese and sour cream.
These crock pot fajitas are so easy to make, just throw everything in the crock pot and come back later to a meal ready to eat. Delicious!
