I love quick breads. I have been trying out lots of different recipes to see which my family likes best. I found this great banana bread variation on Pinterest–banana bread with chocolate chips! It turned out great.
3 large ripe bananas
3/4 c. sugar
1 egg, slightly beaten
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1 1/2 c. flour
1/3 c. melted butter or margarine
2/3 c. chocolate chips
Preheat oven to 375 degrees. In a mixing bowl, mix together bananas, sugar, and egg. Stir in melted butter, baking soda, baking powder, salt, and flour until just combined. Stir in chocolate chips.
Pour into a greased 9×5-inch loaf pan. If desired, sprinkle additional chocolate chips on top of the bread.
Bake for about 45 minutes, or until a toothpick inserted in the center of the bread comes out clean.
Let the bread cool in the pan for 10-15 minutes and then remove it from the pan and let it finish cooling on a wire baking rack.
This bread freezes very well. Make two loaves and eat one now and freeze one for later.
