Homemade marshmallow bunnies are a fun Easter treat to make with your kids. All you need are some white chocolate chips and colored marshmallows. You can have them ready to eat in less than an hour.

Marshmallow Easter Bunnies
Ingredients:
- 12 oz. bag white chocolate chips
- 4 c. colored mini marshmallows
- Shortening
- Bunny shaped cookie cutter
To melt the white chocolate chips in the microwave, place the white chocolate chips in a microwaveable bowl with about 1 tbsp. shortening (the shortening helps make the chocolate melt more smoothly).
Place the bowl in the microwave and microwave for 1 minute. Remove from microwave and stir. Microwave for another 30 seconds. Stir again. The chocolate should be completely melted at this point, but if it is not, then heat for another 30 seconds.
Remove the bowl from the microwave and quickly stir in the colored marshmallows. Don’t stir too long or the marshmallows will start to melt.
Spread the marshmallow mixture on a cookie sheet or jelly roll pan lined with parchment paper (to keep the marshmallows from sticking to the pan). Place the pan in the freezer for an hour or so until the white chocolate re-hardens.
Remove the pan from the freezer and use a bunny shaped metal cookie cutter to cut the marshmallows into the shape of bunnies or other fun Easter shapes. If the cookie cutters stick too much, grease the edges with a little butter or cooking spray.
