If you are looking for a fun, easy treat for Easter, give this jelly bean cookie bark a try. I first saw this idea for bunny cookie bark. This recipe is similar to recipes you will see for bark you can make for almost any occasion. You will see a lot of recipes for similar treats at Christmas time.

I thought this Easter bark was really colorful so decided to give it a try using jelly beans, instead of M&M’s. You can use any kind of Easter candy your family likes.
Here’s what you need:
1 lb. white almond bark*
12 vanilla Oreo cookies
1 cup Easter candy of your choice
Sprinkles (optional)
Cookie sheet
Waxed paper
*If you don’t like the taste of almond bark, try using a mixture of almond bark and white chocolate chips. The measurements don’t have to be exact. Maybe use 1/3 white chocolate chips and 2/3 almond bark. You can use just the white chocolate chips, but when they are melted they don’t spread as well as the almond bark.
Some recipes call for a teaspoon or so of shortening to improve the consistency of the melted white chocolate. If you are just using almond bark, this isn’t necessary. I am going to try a blend of the two next time for a more chocolatey flavor.
You can use any kind of Oreos for this recipe. The vanilla Oreos work well…the yellow cookies look better, but you can use any kind. I would recommend just buying regular stuffed Oreos, not double stuffed. I tried the double stuffed, and although it still turned out great, I don’t think the extra frosting is necessary. It also made it harder to crush the cookies.
Lay out a piece of waxed paper the length of your cookie sheet.
Spread the cookies out on the waxed paper. To crush them I placed another piece of waxed paper on top and then gently crushed them with a rolling pin.
Arrange approximately 3/4 cup of candy on the crushed cookies.
Place the almond bark in a microwaveable bowl and microwave it for 60 seconds. Stir, and then microwave for another 30 seconds. You should be able to stir the rest of the lumps out. Don’t heat it for too long, you just want to melt it.
Drizzle the melted almond bark over the candy and crushed cookies on the waxed paper. You can then use a spoon if you need to move it around a little to make sure all the cookies and candy are covered.
Sprinkle candy sprinkles on top, if desired, and arrange remaining candy on top. Place cookie sheet in refrigerator for an hour or so for candy to harden. Break into pieces and store in an airtight container.
