How to Make a Bunny Cake

It’s fun to make cakes to celebrate holidays. I am by no means an expert cake maker. I avoid any kind of fancy cake making, it’s definitely not one of my best skills! I am always looking for easy recipes to make, and this bunny cake is very easy to make. If I can do it, anyone can!

You can make this bunny cake either with a cake mix or from scratch. I have included recipes to make it from scratch if you choose to. To make this cake all you need is one 8-inch or 9-inch cake layer. If you make the batter for a two-layer cake, you can make two bunnies, which is what I did. The cake and frosting recipes are included below. Besides the cake and frosting you will need:

  • Easter grass
  • Jelly beans
  • Pastel colored Twizzlers
  • White and pink construction paper
  • Scissors
  • Glue stick

First bake the cake and let it cool. To make one bunny you need one cake layer. Cut the layer in half (see photo), and place the halves together. Stand the halves on end on your serving tray. Place a layer of frosting between the two cake halves to hold them together (see photo). If you are using store-bought frosting, you will need three cans of frosting to frost two bunnies. One bunny requires about a can and a half of frosting.

You are now ready to decorate the bunny. Use the remaining frosting to finish frosting the cake. Your cake should now look like the body of a bunny.

There are a variety of ways to decorate your bunny. We decided to use jelly beans for the eyes and the nose. We used two black jelly beans for eyes, and a pink jelly bean for the nose. One of my sons had the idea to use Easter-colored Twizzlers for the whiskers. They look so cute!

For the ears, cut out bunny ear shapes from the white construction paper. Cut slightly smaller pieces from the pink construction paper and glue them to the centers of the white pieces. To place the ears on the cake, I used a sharp knife to make small slits on the bunny’s head to make it easier to push in the paper ears.

Decorate the base of the bunnies with Easter grass and jelly beans, and you have a great centerpiece for your Easter table. Your kids will have a great time helping you make it. It’s a great memory-making Easter activity for the entire family.

WHITE CAKE RECIPE

2 c. sifted cake flour
1 1/3 c. sugar
1/2 c. shortening
1 tsp. salt
2/3 c. milk
3 1/2 tsp. baking powder
4 egg whites, unbeaten
1 tsp. vanilla
1/3 c. milk

Cream together cake flour, sugar, shortening, 2/3 c. milk, and salt for 2 minutes at medium speed. Stir in baking powder, egg whites, vanilla, and remaining milk. Beat for 2 minutes. Pour into two greased 9-inch cake pans. Bake at 350 degrees for 25 to 30 minutes.

WHITE FROSTING RECIPE

3 cups powdered sugar
3 tablespoons milk or water
1 1/2 teaspoons vanilla, if desired

Mix all ingredients. Stir in additional milk, 1 teaspoon at a time, until smooth and spreadable.
