Iced Oatmeal Cookies

Recipe for old fashioned iced oatmeal cookies. One of my favorite easy cookie recipes!

It’s been awhile since I’ve found a new cookie recipe that I really like, so this recipe was a real surprise. I’ve never seen homemade iced oatmeal cookies before.

These cookies truly are like the iced oatmeal cookies you can buy at the store, but much better! This recipe is definitely a keeper. (They are also a great cookie to make for Christmas cookie exchanges!)

 

Iced Oatmeal Cookie Recipe

Ingredients:

  • 2 c. old-fashioned rolled oats
  • 2 c. flour
  • 1 tbsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 2 tsp. cinnamon
  • 1/2 tsp. ground nutmeg
  • 1 c. butter, softened
  • 1 c. brown sugar
  • 1/2 c. sugar
  • 2 eggs
  • 1 tsp. vanilla extract

 

Preheat oven to 350 degrees.

 

To get this dough just the right consistency, you need to place the rolled oats in your blender or food processor and blend them just for a second. Don’t grind them to powder, you just want them to be more crumbly.

In a large mixing bowl, mix together sugar, brown sugar, and butter until well blended. Add eggs and vanilla extract.

 

Slowly add in flour, baking powder, baking soda, salt, cinnamon, nutmeg, and oats, until well blended.

 

Roll dough into 2-tbsp. balls and place them on a greased baking sheet 2 inches apart. Bake for about 10 minutes, or until the bottoms of the cookies are starting to brown.

Cool on the cookie sheets for a few minutes before transferring to a wire rack to cool completely.

 

For the glaze, mix together 2 c. powdered sugar and 3 tbsp. milk. Carefully dip the top of each cookie into the glaze and let the excess glaze drip off. Place cookies back on wire racks until the glaze hardens.

 

These cookies freeze well if you are baking a bunch of cookies to give away as gifts for Christmas.

  1. My 14 year old daughter had some friends over spur of the moment. I wanted to whip up a quick snack for them and had everything on hand so decided to try this recipe. They were a huge hit! They even loved them without the icing (I only iced half the batch). Now my daughter asks for them in her school lunch without the icing. Thanks for sharing this recipe! It is now a family favorite for us 🙂
