Gum Drop Cookies

These gum drop cookies are a great treat for the holidays or any time. They make a great addition to Christmas cookie exchanges!

Gum drop cookies are an old-fashioned kind of bar cookie. You can make them in a jelly roll pan or in a 13×9-inch baking dish, but a jelly roll pan will give you nice straight edges to your bar cookies. I was skeptical with how these would turn out, but it turns out they are really good and also easy to make.

Ingredients:

  • 4 eggs, beaten
  • 2 tbsp. orange juice
  • 2 c. brown sugar
  • 1/8 tsp. salt
  • 2 c. flour
  • 1 tsp. cinnamon
  • 1 c. gum drops, chopped

Preheat oven to 350 degrees. Grease a jelly roll pan or a 13×9-inch baking dish.

Beat the eggs and the juice together. Add brown sugar and mix well. Stir in flour, salt, and cinnamon.

Before you stir in the chopped gum drops, lightly coat them with flour so they won’t stick together. Stir them into the cookie batter.

Pour into prepared baking pan and bake for 25 minutes. Makes approximately 24 squares.

If you are baking for Christmas, these cookies can be stored in a ziploc bag in the freezer until you need them.

  1. There was not enough batter for the jelly roll pan so I used a 13×9 and it worked much better. Next time I will double the batter for the jelly roll pan. The bars tasted great!
